You should certainly install Mob Variants for Minecraft 1.19.3, which will allow you to do that. Thus, the modification will add more texture options for certain mobs. There will be various textures for chickens, dogs, cats, pigs, zombies, and sheep. Although cats already have a variety of textures, the author has added 3 more unique textures. As for other mobs, they do not have variety at all, but this mod will change everything. So, you will find as many as 8 texture options for cows. What’s more, zombies will have 8 new textures and a standard one. So, there will be 9 different zombies in total. They will change the color of their clothes, as well as some other elements.

How to install the modification:

First step: download and install Fabric and Fabric API.

Second step: download the mod file.

Third step: copy the Mob Variants mod package to the .minecraft/mods folder (if it does not exist, install Forge again or create it yourself).
